Blueberry Pancakes

Ingredients
•1 ½ cups Plain flour
•600 mls Buttermilk
•½ cup Dessicated coconut
•1 tsp Finely grated lemon rind
•1 tsp Baking powder
•2 cups Blueberries (fresh or partially thawed frozen berries)
•1 tbsp White sugar
•4 Eggs separated
To serve
•250g Whipped cream
•Tropical fruit slices (e.g. banana, mango etc)
•Maple syrup or passionfruit pulp
Method
1.Stir the flour, coconut, baking powder and sugar together in a large bowl. Make a well in the centre.
2.In a separate bowl, beat together the egg yolks, buttermilk and lemon rind. Gently fold the buttermilk mixture into the flour mixture.
3.In a clean bowl, beat egg whites until stiff, use a slotted spoon to carefully fold through the batter.
4.Heat a knob of butter in a large frying pan and place several large spoonfuls of mixture into the pan. Sprinkle a spoonful of blueberries onto each pancake.
5.Cook for about two minutes or until bubbles form on the surface of the pancakes, then turn and cook on the other side for about 1 minute. Keep warm in the oven, until the remaining mixture is cooked.
Tip
Try putting other ingredients in the pancake batter like chocolate chips, strawberries or other fruit.
